Last October, Enrico Citterio, a 99-year-old entrepreneur in the cured meat industry, passed away. The family chose to make the announcement just after the funeral was held. Enrico was the grandson of Giuseppe Citterio, who created the recipe for Milano salami in 1878 and established the family business, which is now worth 600 million euros. Giuseppe Citterio created salami to transmit the aromas of Italian tradition to emigrants leaving for America, while also overcoming the seasonality of cured meat manufacturing, which was previously related to natural cycles.
