Pre-cooked items, such as cotechino and zampone, generated more than 36 million euros in supermarket sales in December 2023, accounting for 58% of total yearly turnover. Mustard joins them on the table, accounting for 41% of its revenue (more than 3.6 million euros) in the last five weeks of the year. If stuffed pasta and pot cured meat are at the core of the holiday menu, it is the appetizers that make the table opulent, with the finest cured meats, such as Culatello di Zibello Dop, which accounts for 40% of sales at Christmas, and seafood specialties, such as anchovies in spicy sauce.
