(5 June 2018) The latest study by Professor Mauro Serafini, from the Faculty of Biosciences at the University of Teramo, "The Ecological Impact of Obesity: The Metabolic Food Waste was presented in Edinburgh which illustrated, for the first time, the environmental impact of obesity on the planet, through the MFW Metabolic Food Waste indicator. The indicator evaluates kilos of wasted food that an overweight or obese person consumes and their environmental impact in terms of carbon dioxide emissions, water and soil consumption, underlining the nutritional and ecological unsustainability of obesity. «It is important to understand that the health of the planet is closely linked to human health and nutrition is a fundamental tool to protecting both" according to Serafini.
